Eggplant salad
Equipment
- Xiaomi cooking robot
- Scraper
Ingredients
- 500 g baked eggplants well-drained (these can be frozen ones or fresh oven baked and peeled)
- 100 g sunflower oil
- 1/2 piece onion
- 1 pinch salt
- 1 tbsp lemon juice optional
Instructions
- Add the onion in the pot and set the time to 5 seconds, speed 5 clockwise1/2 piece onion
- Put the chopped onion aside1/2 piece onion
- Add the eggplants in the pot and set the time to 5 seconds, speed 5 clockwise500 g baked eggplants
- Use the scraper to clean the margins of the pot
- Set the timer to 1 minute, speed 4 clockwise and remove the measuring cup from the lid. While mixing, gently pour the oil through the measuring cup whole along with the lemon juice and the pinch of salt100 g sunflower oil, 1 tbsp lemon juice, 1 pinch salt
- Add the chopped onion and set the time to 10 seconds, speed 3 counter clockwise1/2 piece onion
Notes
Tip
- For a twist add a tahini spoon along with the oil
- Serve it creatively! With fresh tomatoes and toast!
