Eggplant salad

Equipment

  • Xiaomi cooking robot
  • Scraper

Ingredients

  • 500 g baked eggplants well-drained (these can be frozen ones or fresh oven baked and peeled)
  • 100 g sunflower oil
  • 1/2 piece onion
  • 1 pinch salt
  • 1 tbsp lemon juice optional

Instructions

  • Add the onion in the pot and set the time to 5 seconds, speed 5 clockwise

  • Put the chopped onion aside

  • Add the eggplants in the pot and set the time to 5 seconds, speed 5 clockwise
    500 g baked eggplants
  • Use the scraper to clean the margins of the pot
  • Set the timer to 1 minute, speed 4 clockwise and remove the measuring cup from the lid. While mixing, gently pour the oil through the measuring cup whole along with the lemon juice and the pinch of salt
    100 g sunflower oil, 1 tbsp lemon juice, 1 pinch salt
  • Add the chopped onion and set the time to 10 seconds, speed 3 counter clockwise
    1/2 piece onion

Notes

Tip
  1. For a twist add a tahini spoon along with the oil
  2. Serve it creatively! With fresh tomatoes and toast!
