Preheat the oven to 170 Celsius degrees and grease and line a large loaf tin with baking paper
Weigh the butter into the bowl and melt for 3 minutes, 50 Celsius degrees forward speed 2
40 g butter
Coarsely mash the bananas with a fork in a separate bowl with the cinnamon
1/2 tsp cinnamon, 350g peeled bananas
After the butter has melted, add the sugar and eggs to the bowl and mix for 20 seconds, forward speed 4.Scrape down the bowl and mix again for 20 seconds, forward speed 4 until thoroughly combined. 160 g sugar, 2 eggs
Add the mashed bananas, plain flour, baking powder, bicarb soda, vanilla flavours and a pinch of salt to the bowl and mix for 12 seconds, reverse speed 3. Scrape down the bowl and gently mix any remaining lumps with the scraper. 180 g plain flour, 2 tbsp baking powder, 1 tsp vanilla flavour, pinch of salt, 1/2 tsp bicarb soda
Pour the batter into the tin and bake in the oven for around 50 minutes, one hour until the skewer test has passed.
Let the tin cool and then transfer it to a rack to cool for good.
